This is a wonderful recipe from a Mexican cookbook my mom gave me years ago! I love it, it's so simple! You can vary this recipe by adding beans, meat, onion, and/or garlic

Ingredients For quesadillas (tortilla turnovers)

  • 1 1/2 c
    monterey jack cheese, shredded
  • 6 Tbsp
    green chiles, chopped
  • 6
    tortillas, flour
  • salt
  • oil for frying

How To Make quesadillas (tortilla turnovers)

  • 1
    Put 1/4 cup cheese and 1 tablespoon chiles on half of each tortilla;sprinkle with salt.

    Heat a small amount of oil in a frying pan, and put in the tortillas in, one at a time, without folding. Fry a few seconds.

    Fold the tortillas over the filling, pressing the edges together. Fry on both sides until crisp. Drain on paper towel before serving.
