A delicious, pretty appetizer. You get a crisp salty bite from the prosciutto, and a sweetness from the peppers and sauce.

Ingredients For prosciutto wrapped mini sweet peppers

  • mini sweet peppers
  • 1/2 lb
    lean ground beef
  • 1/2 lb
    sweet or hot italian sausage
  • 1/4 tsp
    dried basil
  • 1/4 tsp
    dried italian seasoning
  • 2 clove
    garlic, minced or grated
  • 1/4 c
    diced sweet onion
  • 1 1/2 c
    approx. good marinara sauce or pasta sauce
  • 6 oz
    fresh grated parmesan
  • **prosciutto slices
  • **fresh mozzarella slices

How To Make prosciutto wrapped mini sweet peppers

    NOTE: The amount of peppers you can stuff will vary depending on the size. If you have a little meat mixture left, make an Italian sloppy joe sammie.

    Brown ground beef, Italian sausage, onion and garlic. Drain any excess fat. Add just enough sauce to make the meat moisture but not runny. Add basil and Italian seasoning, salt and pepper to taste and simmer for 10 min longer.

    Once cool enough to handle, remove meat to a bowl, add parmesan cheese and mix well.

    Cut just the top edge off of the peppers long ways, remove seeds. Stuff with meat/parm mixture.

    Add just a little sauce to bottom of baking dish. Wrap prosciutto around stuffed peppers and place in dish. Spoon on just a little sauce over each pepper. You can also add some red pepper flakes for heat if desired.

    Bake 375° for approx. 35 min. Remove and place a slice of fresh mozzarella cheese on each pepper. Return to oven and bake 15 min longer or until cheese is golden brown and melted. Garnish with fresh basil.
