Ingredients For italian pepper boats

    sliced green olives with pimentos
  • 1/4 c
    garbanzo beans
  • 1/4 c
    chopped artichoke hearts
  • 2 Tbsp
    chopped sun dried tomatoes
  • 1/4 c
    kidney beans
  • 1/2 c
    good quality red wine vinnegarette with olive oil
  • 12
    mini colored sweet peppers

How To Make italian pepper boats

  • 1
    Marinate at least one day in refrigerator Slice peppers lengthwise and seed. Fill peppers with veggies to create boats. Serve.
