donna's cucumber dip

This is such a light and refreshing dip - make sure to make a double batch because it goes fast. I like this with white corn chips.

Ingredients For donna's cucumber dip

    peeled & seeded english cucumber, finely grated
  • 1 pkg
    (8 oz) cream cheese, softened
  • 1 1/2 Tbsp
    onion, grated
  • 1/4 tsp
    cayenne pepper (or more to taste)
  • 1 tsp
    dried dill weed (or more to taste)
  • 3 Tbsp
    mayonnaise
  • 2 tsp
    lemon juice
  • salt to taste
  • 1
    drop green food coloring (optional)

How To Make donna's cucumber dip

  • 1
    Peel, quarter and remove seeds from cucumber. Use a fine grater and grate the cucumbers.

    Drain all water from cucumbers, make sure no moisture is left. I put the grated cucumbers in several layers of paper towels and squeeze the liquid out.

    Mix all ingredients together and refrigerate at least 4 hours.

    Garnish with fresh dill leaf. Serve with pita or white corn chips.
