3/4 lbcooked peeled shrimp

1 1/2 cpeeled, seeded, diced cucumber

3/4 cdiced red onion

1 1/2 Tbspchopped, seeded jalapeno peppers

1 1/2 c(about 1/4 lb.) quartered, stemmed strawberries

3 Tbspchopped fresh cilantro
- CEVICHE DRESSING

1/4 cchopped, stemmed strawberries

1/4 cchopped plum tomato

2 Tbspolive oil
-
4 tspfresh lime juice
-
4 tspred wine vinegar
-
2 tspchopped, seeded jalapeno peppers

1 tspgranulated sugar
-
1/2 tspsalt
-
1/4 tspworcestershire sauce
How To Make strawberry shrimp ceviche

1Ceviche dressing: In blender or food processor, puree all ingredients until smooth.

2In large bowl, toss shrimp, cucumber, onion and peppers with Ceviche dressing. Refrigerate, covered, at least 30 minutes, but no more than 4 hours.

3Just before serving, add strawberries and cilantro; mix gently but thoroughly.
