  • 2 c
    finely chopped napa cabbage
  • kosher salt
  • 12 oz
    ground pork
  • 8 oz
    shrimp, peeled and deveined coarsly chopped
  • 3 md
    scallions thinly sliced
  • 3 lg
    cloves garlin minced
  • 2 Tbsp
    shaxing chinese rice wine
  • 1 1/2 Tbsp
    grated ginger
  • 1 Tbsp
    soy sauce
  • 2 tsp
    toasted asian sesame oil
  • 1/2 tsp
    sugar
  • fresh ground black pepper

How To Make chinese dumplings # 1 ( the filling )

    In a medium bowl, toss the cabbage with 2 tsp. salt and set aside for 30 minutes to shed moisture. Wring out in a clean kitchen towel to extract as much liquid as possable.

    In a large bowl combine the cabbage with the pork, shrimp, scallions, garlic, Shaoxing, ginger, soy sauce, sesame oil, sugar, and 1/4 tsp. black pepper. Stir well until mixed. Refrigerate for at least 20 minutes
