This is a nice alternative to the regular mayo-based egg salad that may go in sandwiches (this one does not!). It came from an employee who has been gracious enough to share some of his favorite Italian recipes.

Ingredients For italian egg salad

  • 4 lg
    eggs, hard boiled
  • 3 Tbsp
    olive oil
  • 1 Tbsp
    red wine vinegar
  • 1 sm
    scallion, minced
  • 1 stalk
    celery, minced
  • 1 tsp
    fresh parsley, minced
  • 1/4 tsp
    salt
  • 1 pinch
    pepper, freshly ground

How To Make italian egg salad

  • 1
    Peel and slice hard boiled eggs.
  • 2
    Whisk together oil and vinegar, then add all remaining ingredients.
  • 3
    Sprinkle dressing over eggs.
