In the US, Andouille sausage is most often associated with Louisiana Creole cuisine, where it is a coarse-grained smoked sausage made using pork, garlic, pepper, onions, wine, and seasonings. The pork used is mostly from a smoked Boston Butt roast. Once the casing is stuffed, the sausage is smoked again (double smoked), making this a truly flavorable sausage. Ingredients For andouille pizza muffins

  • 1 1/2 lb
    bulk andouille sausage
  • 1 jar
    (14 ounces) pizza sauce
  • 2 c
    (8 ounces) shredded mozzarella cheese
  • 6
    english muffins, split and toasted

How To Make andouille pizza muffins

    Preheat oven to 375 degrees F Cook sausage in large skillet until browned; drain. Add sauce and stir with sausage; simmer for 12 to 15 minutes, stirring occasionally.

    Lightly butter English muffins; place on a cookie sheet and toast until very lightly browned.

    Divide sausage mixture evenly onto twelve muffin halves, sprinkle generously with cheese. Serve warm.
