This is a warm soup, but it tastes just as good cold as well. The lime and mint gives a fresh touch to it. Perfect as a starter or a meal or as a lunch.

Ingredients For warm avocado soup

  • olive oil
  • 1 sm
    onion
  • 2 clove
    garlic
  • 1/2
    inch fresh ginger, minced
  • 1 pinch
    of dried chili
  • 2
    limes, juice of
  • 10
    fresh mint leaves
  • 3 md
    avocados
  • 1 c
    water
  • salt & pepper
  • MINT OLIVE OIL:
  • 15 - 20
    fresh mint leaves
  • 3 Tbsp
    olive oil

How To Make warm avocado soup

    Add olive oil to a pan on medium heat. Sauté onion, garlic, ginger and chili until soft.

    Place in a blender together with the rest of the ingredients. Pulse it and taste, add more salt and water if needed. Pour it into a pot and heat it before serving.

    Mint Olive Oil: Pound 15-20 mint leaves in a mortar, add 3 tbsp olive oil and mix. Let it sit for a while before dripping it over the soup. You may add some more olive oil if you want it thinner.
