This was my first attempt at this pie (ended up making two at the same time) - I accidentally put double the amount of butter in, so I made another. I baked it anyway.It wasn't as "custardy",more creamy,was delicious and the crust was better esp once cold

I've done things like that before too...but then we like more coconut in it than most do probably.
Have you tried that "coconut macaroon pie" that is on JAP??
I did and it's awesome too.
Just don't put in too too much, or it'll soak up your liquid, but a fair amount was good (I think I added about a cup/nice handfull).
