Had To Have A Piece Soon After It Came Out Of The Oven While It Was Still Warm. This Is So Good!!! Before I Put It In The Fridge, I Had Two More Pieces. This Is So Good That I Could Just Eat It Right Out Of The Pie Plate In One Sitting. But I Didn't.

This Time I Tripled The Recipe, Added 2 Tbl More Butter (i Like The Crust Better That Way After Its Cold A Day Later) And Made Just 2 Pies. The 1.5x Recipe Worked Great For One Pie, So This Should Be Great Too...both Pans Filled To The Top & Smell Great!

I've done things like that before too...but then we like more coconut in it than most do probably.
Have you tried that "coconut macaroon pie" that is on JAP??
I did and it's awesome too.

Sherry, I did try it with coconut; however I added way too much. It was still awesome & I didn't alter the recipe at all. a 1/4 cup is probably enough, I added a whole bag. LOL.

Sherry lots of people have tried it with coconut in it.....I have too, it's good that way.
Just don't put in too too much, or it'll soak up your liquid, but a fair amount was good (I think I added about a cup/nice handfull).

Have you tried it with coconut yet, I have seen coconut custard pies & bought them at the grocery stores bakery, very good. This seems easy I don't know if coconut would change how much liquid you would need? Sounds like it is worth a try.

Charlotte, I didn't bake it any longer than usual. It had a very nice texture as well. This one I chilled first. Otherwise I prefer to have it warm. I just didn't have time to eat some when it was done!!
