Jane this recipe is so awesome!! I'm so glad your friend Nicki had you make this. This is the FIRST homemade recipe I've made that did NOT freeze so hard you couldn't scoop it out. It firmed up very nicely, yet still soft enough to scoop! I decreased the vodka by just a little and made up the difference with the creme de mint. The creme de mint also added a touch of the green without adding additional coloring. When I saw Andes "pieces" I knew I had to try them. I love Andes Mints. This is just the best recipe ever!! I will use the base recipe (including the vodka) for future recipes.

Like the idea of creme de mint.
That's something to think about if no mint is handy, and love the idea of Andes candies too.
