This is the photo of the pie I made this afternoon. Used two pints of strawberries. Not quite a "mile" high but it's still going to be a fantastic dessert for after dinner tonight. 5/13/16
Can't believe it's been almost 4 years since I first made this pie. It is so simple to make and so delicious! This time I used a frozen deep dish pie shell. I didn't pile the strawberries quite as high as I'm taking it to church tomorrow.
One slice of heaven on a place.
YUMMY! It is sooooo DELISH!!!
The strawberries kindof slid off
the piece of pie; but you can tell that there are PLENTY of strawberries to eat with this one piece of pie. 5/26/12
This is the end result of Mile High Strawberry Pie...placed in a
9" pie crust. You can see the
extra strawberry glaze leaking on the stove. YUMMY! Can you tell how high the pie is? 5/26/12
I cooked the water, sugar and corn starch mixture for about 4 minutes after it just started to boil. When it was thickened I added the strawberry jello and mixed it in until it was well incorporated. Strawberries are now ready 2 put in pie shell.
I like getting things together before starting to bake. So I put the 4 T corn starch in a small bowl, measured the 1 1/2 cups water and put the 1 1/2 cups of sugar in the saucepan. Ready to go. 5/26/12
This is a picture of the two
trays of strawberries (2 qts)
that I bought to make this pie.
DID NOT use all of them. Washed and hulled them last night. 5/26/12
The only reason I could see that someone would NOT like this pie is if they are allergic to strawberries. This pie is fabulous!!
I'm doin' okay. The question is HOW are YOU???

Thanks, Colleen, for sharing this recipe. I was thinking about this recipe just a couple of days ago. I just might have to make one again soon. Got Banana Cake with Buttercream Frosting....and Chocolate Cake with Chocolate Frosting to eat first. LOL... Leftovers from a church get-together. Then I just might have room in my refrigerator again...for a pie. 4/27/13
Rose, when I made this pie on Father's Day, I cut most of the strawberries (which were large) in half while just a few I left whole. I think they pack in there better when they are sliced in half, but that is JMO. :-)
When I make this pie again....and I will make it again....I will cut the strawberries in half again because I am afraid that they will ROLL off the pie when I moved it from the stove to the refrigerator. This pie is soooooo good. 6/18/12

Just a preference...no right or wrong!
