Low in fat and high in protein, chicken breasts are a healthy and easy dinner option. If not cooked properly, though, they can be dry and not something the family will give two thumbs up. Well, once your family tastes these chicken breast recipes they’ll definitely be requesting these dinners again.

“Quick and easy with delicious results,” is how Sara Andrea (Eugene, OR) describes her Slow Cooker Chicken Cacciatore. Her Crock Pot meal is definitely a keeper.

Green bell pepper, fire roasted tomatoes, onion, and mushrooms, along with Italian seasonings, really give this dish tons of flavor. Added bonus, it smells so good while simmering in the slow cooker. If cooking for a family, we would recommend doubling the recipe. People will definitely ask for seconds (maybe thirds!).

Sheet pan dinners are all the rage these days. While not all chicken recipes, the Kitchen Crew did put together a roundup of easy sheet pan meals you should check out if you want a simple dinner option.

A chicken sheet pan recipe I love is Linda Bailey’s (Sterling Heights, MI) Green Beans, Chicken Breasts and Red Skin Potatoes. “This is such an easy dish for any dinner,” shares Linda.

This recipe is sure to be a family favorite. The chicken juices mix with the butter and Italian seasoning creating a delicious sauce that’s full of flavor. In a jam, you can use canned green beans but we’d suggest using fresh ones.

Stacey Lawson’s (New Orleans, LA) Parmesan Chicken Pops is a simple recipe with seriously big flavor.

“Great tasting, crunchy chicken strips that the whole family will love,” says Stacey. “My nephew loves foods that are crunchy and he loves these.” What kid wouldn’t like food on a stick?

This is a fun, easy way to make a splash at dinner. Stacey uses a mixture of Corn Flakes, Parmesan cheese, and granulated garlic to cover the chicken strips – it’s fantastic. It would be a delicious coating for a basic baked chicken breast too.

If your family enjoys baked chicken, try Randi Williams’ (Los Angeles, CA) Baked Dijon Chicken. “This is a perfect meal for those nights where time is of the essence,” reveals Randi. “Team this up with some mashed potatoes and veggies and you’re set!”

Sometimes it is difficult to keep chicken from drying out too much when baking. Well, no need worry about that with this recipe. The milk and mustard combination add flavor and work together to seal in moisture. A chicken-lover’s delight.

“This 4 Cheese Chicken Lasagna is sure to please.” thinks Jenni K.’s (Carlton, MN). “Not the normal tomato sauce based lasagna, a different take on a family favorite!”

Jenni’s chicken lasagna is warm cheesy goodness. The flavors of the different cheeses mixed with the fresh onion, garlic, and bell pepper are perfect. And the sauce is so creamy! A great alternative for someone who loves Italian food but doesn’t care for a red sauce.
