Late Night Nachos


It's game day! Ok, well almost game day. The NFL season begins this Thursday and college games kicked off last weekend. What does that all mean? It's time to start eating finger foods! They are a necessity when watching a game and I've put together a football party menu that'll make you a winner.

No party is complete without wings. But don't serve just any wings, serve Nor M.'s Cranberry Sweet Hot Wings. "I bring them to a lot of parties," reveals Nor. "No one would ever guess what ingredients are used."

Nor uses cranberry sauce, Dijon mustard, orange juice, soy sauce, brown sugar, some spices, and Buffalo sauce to create an amazing glaze. The result is sweet, tangy, moist, and tender hot wings. Grab extra napkins because they are wonderfully messy.

"I wanted to try something different instead of a plain onion ring," shares Kathy Sills (Harrisville, MS). "So I came up with Deep Fried Onion Balls With Cajun Ranch Sauce." These are so good.

Kathy uses onion broilers as the base for the reinvented onion ring. They can be found in the produce section at most grocery stores. As Kathy explains, they're a little bigger than a pearl onion and the perfect size to pop in your mouth.

With 4 tablespoons of red pepper, these do pack a healthy punch of heat. The Cajun ranch dipping sauce does cool them down slightly. If you don't like spicy, simply cut back on the red pepper. They'll still be full-flavored.

Pizza is always a favorite in my house on game day. I love making Melanie B's (Kennesaw, GA) Pizza for One recipe. "They are so good and you can use whatever ingredients you want or like," says Melanie.

Refrigerated biscuits are the crust. Splitting the biscuit in half and pressing it in the muffin tin is just the right amount of dough for each pizza. Using your favorite toppings, these are a quick and easy to prepare. They're bite-size and easy to eat.

Angie Hooper (Vancouver, WA) named her nacho recipe Late Night Nachos but in my book, these should be called anytime nachos because you're going to want these all the time!

"This is simple and not too expensive, plus it's really tasty," explains Angie. The star is the layers of savory beans, taco meat, nacho cheese, and shredded cheese. Once baked, it's ooey gooey deliciousness. Serve over your favorite tortilla chips, with your favorite toppings, and you have fantastic nachos.

End the day with a sweet treat like Belinda Castillo's (San Antonio, TX) Football Oatmeal Ice Cream Sandwiches. She thinks they're "fun and yummy" and I'd agree.

The oatmeal cookie is soft and chewy. Shaping them and using white chocolate for the stitches, really makes the cookies look like a football. Then, sandwich yummy vanilla ice cream between the oatmeal cookies and you have dessert adults and kids will love. These would be great with chocolate ice cream too.
