Janet's Notebook: What to Grill For Dinner Tonight
Up until I tried Brad Nichols' (Pleasantville, NY) Cedar Plank Salmon, I'd never cooked on a cedar plank. I'm glad his recipe caught my eye.
"The product of some lake house weekend cooking creativity, this recipe has evolved to become a family favorite - and don't underestimate the salmon salad you could make from leftovers," shares Brad.
Charring the cedar, and then cooking the salmon on the charred side, gave the salmon so much flavor. And the seasonings added elevated the flavors even more. This really is a wonderful salmon recipe.
Shrimp are perfect when having a lighter dinner. Josephine Quick's (Indianapolis, IN) Grilled Jalapeno and Lime Shrimp Skewer recipe needs to be added to your recipe box.
With juicy citrus and a bit of heat from the jalapenos, you're going to fall in love with the flavor of the shrimp. It's delicious and super easy to prepare.
Josephine suggests using metal skewers when making the recipe. If you don't have those, wooden ones will work. Just make sure to soak them in water before grilling to prevent burning.
"Veggies marinated in balsamic vinegar and soy sauce, then cooked in a grill basket until smoky, slightly charred and tender-crisp," is how Susan Din (Houston, TX) describes her Balsamic Grilled Vegetables.
Marinating overnight allows the veggies to absorb the goodness from the balsamic vinegar and soy sauce. When grilled, the charring enhances the flavors even more. These are fabulous.
Serve Susan's grilled vegetables alongside Linnette Lucas' Grilled Asian Wings and I guarantee kids will clean their plate.
"I had a craving for wings but didn’t want the deep fried 'fatty' stuff," explains Linnette. "I decided to try mixing together a few flavors and seeing what happens."
The result? Some mighty fine wings. The marinade was great and had a little kick to it. The honey Sriracha sauce takes these wings to another level. You still get the sweetness from the sauce without the Sriracha being too overwhelming. Make sure to save this recipe for tailgate season... football will be back before we know it.
Lucky enough to have access to fresh seafood? Then definitely try Maggie ^O^'s Grilled Seafood Sandwich Roll.
"I like to make it the night before so it is well chilled, but you can make it shortly before you need it and put it on ice for a quick chill," says Maggie.
The grilled seafood makes this recipe. Filled with lobster, shrimp, and crab meat, it's summertime deliciousness on a plate. Grilling lobster is a fantastic way to prepare it because it adds such a great flavor. Served on classic hot dog buns, this is a heavenly twist on lobster rolls.
If you're looking for something lighter to grill during the warmer weather, these are all delicious and easy grilling recipes. Fire up the grill and get cooking. Happy Pinching!
