Easy Grilled Chicken Recipes

Sweet and Sour Grilled Teriyaki Chicken (Fajitas)

When the weather gets warmer, my grill gets a workout. Chicken becomes a staple in my dinner rotation and grilled chicken is seriously one of the simplest meals to prepare during the summer. There are so many, that my taste buds never get tired.

Chicken wings are often fried and sometimes baked. But grilled? Angela Gray (Bristol, TN) threw chicken wings on the grill for her Orange Glazed Chicken Wings and the result was amazingly delicious.

“This is a great appetizer for any occasion and is super easy to make,” says Angela. “The orange marmalade and lime juice are a tangy combo and the hot sauce is the surprise KICK!” Angela’s orange marinade and sticky orange glaze are unusual and made these wings so tasty.

A simple marinade packed with vinegar and seasonings is what makes Elizabeth Mattice’s (Rockledge, FL) Grilled Florida-style Chicken special. “I love this grilling sauce as it is not a red or tomato-based sauce,” shares Elizabeth. “It has been a family favorite for generations and each generation has experimented with the basic sauce to create interesting variations.”

I made this just as Elizabeth posted and it’s fabulous. Great for an easy dinner. A variation of her marinade includes substituting tequila and lime for the vinegar. I plan to try that version soon.

Another chicken where the marinade makes the meal is Diane M.’s (Twin Falls, ID) Oriental Grilled Chicken. “Over the years, my cooking style has changed,” reveals Diane. “This is one recipe that has stood the test of time.”

Diane’s chicken is seriously simple. Even your most devout of red meat eaters will be able to embrace this deliciously hearty chicken recipe.

With soy sauce, ginger, and sesame oil, the marinade definitely has an Asian flare. Once grilled, the chicken is delicious served alongside rice and veggies. If you have leftovers, they’d be fantastic on top of a salad the next day.

“This dish is so, so easy to prepare and can be served hot or cold,” explains Barbara Mayo (Collierville, TN). “I make my rice the night before so all I have to do while the chicken is resting is mix salad.”

Barbara’s Cilantro Lime Grilled Chicken Breast With Southwest Yellow Rice Salad is a lovely, light and flavorful dinner. The chicken is filled with cilantro and lime flavor but they’re not overpowering. If you’re able to get your hands on fresh corn, it’s worth using. The corn salad does have a bit of heat, but it pairs very well with the chicken.

“This was a spur of the moment idea that turned out great,” says Lauren Perkins-Boyd (Portland OR).”[It’s] super fast and healthy.” I’d describe her Grilled Chicken Sandwiches With Cilantro Lime Mayo as downright scrumptious too. The combination of grilled chicken, lime, and taco seasoning is terrific.

Allison Hazell’s (Jacksonville, FL) Sweet and Sour Grilled Chicken Teriyaki Chicken (Fajitas) are fantastic. She mixes teriyaki chicken with sweet and sour vegetables to create one magnificent meal.

“All can be done on the grill,” Allison points out. “Wait for the major raves – sweet and sour and teriyaki, what could be better. I usually put tortillas on the table with this and guests can make fajitas.”

The saltiness of the chicken and the slight sweetness of the peppers and onions is an excellent fusion of flavors. This dish would go great served with tortillas or over a bed of Jasmine rice. It’s delicious!

Grilled chicken doesn’t have to be plain and boring. All these chicken recipes are full-flavored and easy to prepare. Pick up some chicken at the supermarket and get grilling. Happy Pinching!
