Easy Cookie Recipes Bursting with Fall Flavors


Oatmeal, Apple, Cinnamon Chip Cookies


Cookies are a favorite in my house. I typically bake a batch to have handy for when guests drop in or when I need to bring an easy dessert somewhere. What I love most about these cookie recipes is they're packed with yummy fall flavor.

Cinnamon chips are typically only available at certain times of the year. Thankfully they're around now so I can make Dee Stillwell's (Citrus Heights, CA) Oatmeal, Apple, Cinnamon Chip Cookies.

Dee picked up a bag at her local store and wanted to come up with a good recipe. "I had a lot of apples and thought an apple oatmeal cookie would be a good way to use them," explains Dee. "They turned out awesome and everyone loved them."

The spices and the cinnamon chips give this cookie a burst of cinnamon flavor. Walnuts add crunch and you taste the apple bits. This recipe takes oatmeal cookies to a brand new level of deliciousness.

"It feels like fall when I make these cookies," says Teresa Jacobson (Jacksonville, FL). "Pumpkin is enhanced with cranberries and chocolate chips for a nice change from regular chocolate chip cookies."

Teresa's Harvest Chip Cookie is a wonderfully tasty soft cookie. I loved the sweet and tart combination of chocolate chips and cranberries. Teresa mentions that butternut squash or sweet potato puree can be substituted for the pumpkin. I haven't tried this yet, but I'm going to. It'll adjust the taste, but still be packed with fall flavors.

Debbie Decker (Phoenix, AZ) made Chelsea Mitcham's (Houston, TX) Double Caramel Apple Cookies and thought they were delicious. I thought so too.

The combination of apple chunks, cinnamon, and caramel is divine. What makes the cookies special is the homemade caramel. You can substitute a store-bought caramel if you'd like, but there's something special about making it from scratch. Hidden in the center, when you bite is the caramel's burst of sweetness.

"Who doesn't love pumpkin," asks Sheila Devor (Towanda, KS). "I use it all year long. It's one of my favorite ingredients and this Pumpkin Oatmeal Chocolate Chip Cookies recipe is a keeper." Even people that don't care for pumpkin will like this one, I think.

The cookie's soft and delicate with a slight pumpkin flavor. It doesn't have the typical pumpkin spices, just cinnamon. Oats add a little texture and chocolate chips are a great complement to the pumpkin flavor. This recipe makes a lot of cookies. They'll freeze wonderfully or make these if you're heading to a harvest party.

If you're looking for a healthier cookie, try Crystal Schlueter's (Northglenn, CO) Healthier Than Candy Pumpkin Cookies. "I made these cookies for a friend's children, as they aren't allowed to eat candy or anything too unhealthy," explains Crystal. "The kids loved them and my friend approved!"

These yummy treats are super moist and tasty. They're so good, kiddos won't miss the candy. And adults can sneak a few too. They're great on their own, but if you have extra cream cheese frosting add a dab to the top. It's the perfect topping.

When I see cookies, I want to be like Cookie Monster and eat them all. They're simple to make, can be adapted for any party and everyone seems to love them. I hope you give one of these fall-tastic cookie recipes a try. Happy Pinching!
