Winner, Winner Have an Easy Chicken Dinner Tonight

Chicken is my go-to when I just can’t figure out what to make for dinner. Whenever I find myself wondering what to make, I grab a package at the market or pick up a rotisserie chicken to get cooking.

My local grocery store makes a fantastic rotisserie chicken. I’ll pick one up to make a quick chicken soup or eat with a salad and veggies. Dee Tourville (Florida) uses one for her Easy Cheat Bar B Que Chicken Calzones. “This is an easy calzone on those days you just don’t have time for the real thing,” thinks Dee.

They’re easy and delicious. The calzones have a bit of smokiness from the barbecue sauce and a hint of sweetness thanks to the onion. As soon as you take a bite cheese just oozes out with the juicy shredded chicken. Great for a quick dinner or a game day snack.

Sherry Price’s (Easley, SC) Grilled Chicken Pizza is a great way to use leftover baked or rotisserie chicken. “This pizza is out of this world,” says Sherry. “No matter what you add, within reason, I don’t think it could hurt this pizza.”

If you’re only cooking for one or two people, this is a perfect dinner. But, you can easily double or triple the recipe if you’re hosting for a crowd. I loved the flavor combination of bacon, ranch, chicken, and cheese. Customize these pizzas based on your favorite toppings. It’s a simple, quick and a great way to reinvent leftovers.

“This is my son’s favorite,” shares Stephen Lee Parker (LaGrange, GA). “I created this [recipe] after trying a tempura batter recipe for frying vegetables. It is really quick and easy.”

Kiddos are going to go crazy for Lee’s homemade Chicken Fingers. The mix of herbs and spices is subtle but super flavorful. The ginger ale in the tempura batter gives them a slightly sweet taste. You’ll never buy frozen chicken fingers again.

I love the tangy, sweet marinade in Allison Hazell’s (Midlothian, VA) Balsamic Bque Chicken, Spinach, Apples & Smoked Gouda. The recipe is a mouthful to say but tastes so yummy.

“This marinade/glaze/sauce is great on so many things,” says Allison. “With this grill recipe, you get the flavor combination of barbecued chicken, the sweetness of apples, spinach and melted smoked gouda.”

The marinade really gives this chicken so much flavor. The layers of spinach, apples, and smoked gouda really makes this dish shine. It’s yummy!

Nancy Lopez (Amarillo, TX) was searching estate sales and found a stoneware crock for roasting a chicken and knew she had to have it. She uses it to prepare her Vertical Apple Hickory Roasted Chicken recipe.

I love this method of cooking chicken. The prep time is minimal and the results are the most succulent, juiciest chicken. The meat just falls off the bone. If you don’t have the stoneware crock, don’t worry. Make this tasty recipe using a vertical poultry roaster you can find on online, Or, balance a can in the cavity of the chicken. Then, place the chicken (standing up) in a roasting pan.
