Breakfast Recipes to Start the Weekend Off Right

Orange French Toast with Pecan Sauce

Growing up, my mom would always say to me that breakfast is the most important meal of the day. Because of mom’s advice, I try to have breakfast every day. During the week I like to stick to a smaller, lighter meal. But on the weekends, I love to go big kick off the weekend in an indulgent way.

“When these come out of the oven your willpower will go right out the door,” jokes Lauren Perkins-Boyd (Portland, OR) of her Overnight Sticky Buns. Seriously, what’s more indulgent than a gooey cinnamon roll?

These sticky buns are easy to prepare and most of the work is done the night before. I particularly liked the maple syrup and honey topping… a great mix of flavors!

If you’re on the go, try Marie Gunkel’s (Palmyra, NY) Breakfast Burritos. This recipe is not only easy to throw together, it’s delicious.

“I started making this burrito years ago,” explains Marie. “Not many people I know enjoy spinach but when I make this they eat it up. I love this for breakfast or anytime – they never last long in my house.”

The cheeses add a savory flavor, while the pepper flakes and salsa add a big kick. The eggs turn out perfectly creamy. Filling and hearty, this breakfast burrito is great for breakfast or brunch.

Another simple, but full of flavor, breakfast recipe is Lindsay Dougherty’s (Maple Shade, NJ) Ham & Cheese Sandwich Frittata.

“I love grilled ham and cheese, so I wanted to use those flavors in a breakfast-type dish,” shares Lindsay. “This recipe is simple, quick and very filling.”

This quick and easy frittata is great for brunch or breakfast but is hearty enough for a tasty dinner too. Packed with the garlic, onion, and mustard you taste those flavors in every bite. What I really loved was the butter toasted bread addition – so yummy.

Fall is just around the corner. Incorporate fall spices into breakfast with Megan Todd’s (Warren, OH) Autumn Pancakes with Caramelized Walnuts. Megan makes these for her family every Thanksgiving and wakes her family with the fantastic aroma. If you’re having houseguests this weekend, these pancakes will definitely get everyone out of bed in a flash.

Light and fluffy with flavor from the allspice and cinnamon, these pancakes are really delicious. The candy walnuts add some crunch and sweetness. I may make the walnuts again just for a snack, they’re that good. If you have any extras, Megan notes she “freezes them with wax paper between each pancake for a quick breakfast.” That’s if you have leftovers…

“If you are really in the mood to completely blow your diet (as I was last weekend), this is the way to do it,” thinks David Reeves (Collierville, TN) of his Orange French Toast with Pecan Sauce. “Don’t substitute another bread – it’s worth it to use challah or brioche. The texture and taste will win you over.”
