Sausage Skillet Supper

Breakfast is my favorite meal of the day. In my house, though, breakfast isn't only limited to morning. Sometimes I like to serve a recipe traditionally for breakfast at dinnertime. It's fun and always a hit.

After Denise Miles (Auburn, AL) made her Sausage Skillet Supper for the first time, her hubby immediately asked her to make it again. With that type of response, how could I not try the recipe?

One bite of the skillet and I knew Denise had a great recipe. The flavors are spot on. The eggs are baked into a "well" of potatoes, onions, sausage, and bacon. Yummy! Try some additional add-ins too. Green or red peppers would be great or maybe mix up the types of sausage used. The possibilities are endless!

Michelle London's (Gonzales, TX) Texas Two-Step Breakfast Casserole isn't only quick and easy, it's also delicious. "I made some modifications to a typical Southwest breakfast casserole recipe," explains Michelle. "Egg casseroles can be a bit dry, but this one comes out moist and delicious every time."

There is seriously so much packed into this casserole - chilies, sausage, onion, cheese, tomatoes, corn tortillas, and tons of spices. With all the ingredients, I was concerned there wouldn't be enough eggs. But I was wrong. It was perfect and not dry at all. This recipe's very versatile and great if you're feeding a crowd.

Kathy W. (Englewood, OH) mixes two types of potatoes for her Sweet Potato Hash. I never thought about mixing white and sweet potatoes, but I'm glad Kathy did!

When you cut into the poached egg on top, the yolk breaks over the potatoes and becomes a sauce. If you have meat leftovers, consider adding them to the hash. Short rib or corned beef would be amazing. It will bulk up the recipe a bit creating a flavorful dinner.

Nachos are extremely popular in Barbara Burge's (Los Gatos, CA) house, so she came up with fun Southern Breakfast Nachos.

"This is a Saturday morning favorite for us," shares Barbara. "And sometimes this dish does double-duty as a busy weeknight dinner."

Corn chips are the perfect vessel for the goodies that go on top. The green chilies and onions are fab combined with the sausage. Barbara adds avocado, cheese, and sour cream, but put out items your family likes. This recipe is quick, easy and lets everyone have a bit of fun with their meal.

Pumpkin spice is all the rage these days, so why not make a batch of Janis McRae's Spiced Pumpkin Pancakes for dinner. They're a nice change of place from a traditional pancake.

These have a nice pumpkin flavor without being too overpowering. Even without butter and syrup, these are fantastic. Debra Peterson (Crookston, MN) made these and got rave reviews from her family. I bet you will too.

This is a good one for supper. CHEESY HAM & BACON BREAKFAST CASSEROLE
Covering with foil for half the baking time keeps it very moist.

Love to do something like this too: BACON EGG & CHEESE SCRAMBLE, maybe saute some veggies in the bacon fat, the pour the eggs over them. OH YA!

Great Grandma's Hash Brown Potatoes with some breakfast meat and a perfectly cooked egg on top that runs all over when the yolk is broken. YUMMY!

I love breakfast for dinner. I normally make it about once a week.
Basic Waffles smothered in Fig jam, with a side of bacon, ham or sausage. YUMMY!
