Jersey-born Nomad

I haven't been to Jersey for nearly 50 years, and I miss it, having spent my first 6 years living there in Westfield, Matawan, North Arlington, and Rutherford. We came back to visit relatives now and then, but I still miss the tomatoes, the houses, and, occasionally, even the bad air, lol. I can't wait to look at some of the recipes here.

Egg Plant Casserole What Goes Best?

Hey! Originally from New Brunswick, I am now a southern girl living in Mobile, Al. I spend my weekends making great food to eat and decided to try out a recipe for eggplant casserole. What does well with eggplant? Drinks, appetizers, meat? What do you guys think?

I just was told that many of the U~Pick Farms have gone expensive! :(

I have beenout of Jerzy for years..My husband and I would go in the fall to Hallock's and then stop in Cassville at this corner bar and have a foot long hotdog w/ kraut of chili, and down all with a frosty cold ice beer from tap! (tradition)....

We hope too follow traditon this October for a week......

Jersey Tomatoes/Tomatoes Lutece

Despite the fact that I'm a lifelong Jersey resident, I won't eat raw tomatoes. My husband grows them and loves them, though, so I make this a lot in the summer. It was my mom's recipe.
Tomatoes Lutece
Mix together:
1/4 C chopped parsley
1 clove garlic, crushed
1 tsp salt
1 tsp sugar
1/4 tsp black pepper
1/4 C vegetable/canola oil
2 tbl white vinegar
2 tsp prepared mustard
Slice 2 or more tomatoes and place in a dish with a tight lid. (Garlic is strong.)Pour dressing over tomatoes and refrigerate for a few hours before serving to let flavors blend.

I am a life long NJ resident, for over 50 years. NJ has the best tomatoes and outstanding sea food. In my area we have a diverse population, with good eats a la Polish, Italian, Latino, and Asian. NJ rocks when it comes to food.
