Healthy, quick, inexpensive, low fat, low carb

Does the above description sound like something you have eaten that tasted amazingly like a reward or a decadent delight?

I have not found a great number of healthy snacks other than plain fruits and veggies. It seems like everything I find appealing is chock full of fat, carbs, sugars, cholesterol... mostly empty calories but lots of them!

I am one who could use some inspiration in this area. One thing I do enjoy is this:

Naked Apple Pie

Wash a baking apple (Granny Smith is a fave).
Remove core and stem with a thin knife blade, but leave the blossom end intact by about 1/4 inch.

Into center place a mixture of:
*1 teaspoon I can't Believe It's Not Butter spread
*1 or 1.5 Tablespoons Splenda granulated brown sugar replacement.
*1/4 to 1/2 teaspoon spices... I like to mix cinnamon, cloves and nutmeg... sometimes a little ginger, too.

Cover top loosely with plastic wrap.
Microwave a couple of minutes or til done.

Eat warm or cold with fat free whipped topping.
