Turning cauliflower into rice is a great trick. Just whir cauliflower in the food processor until it is the consistency of rice, steam and serve. Sometimes, however, you want a more substantial dish and often that means adding cheese. Nothing wrong with cauliflower and cheese, mind you, but a healthier move is to incorporate whole grains whenever you can.
Cauliflower rice and bulgur wheat is a great combo.
Cook the bulgur wheat according to package or web directions until it is almost done. Stir in the cauliflower rice and allow it to cook briefly while the bulgur is finishing up. Stir in flavoring ingredients of your choice.
I particularly like to add a bit of a peppery olive oil, chopped oil-cured olives, and chopped capers. Another alternative is to add pesto and a bit of freshly grated parmesan. For more color, add roasted red bell and chopped herbs. Use your imagination and enjoy!
Whole grains are very important in our diets. I was delighted to see Muna had started this group but sad to see it's gone cold. Would anyone object if I tried to revive the group, find more members, etc. so we could start sharing recipes for things like savory oatmeal, etc.?
Does anyone have any good seasoning ideas for cooked barley? I'd like to begin serving it as a side dish in place of wheat bread, but I'm looking for something other than the standard salt, pepper, and butter.

I am new to the group...the site, actually, but I am loving it. I love some of the great recipes you ladies have put up and I look forward to seeing if my little nugget likes them. I am also going to share some of my favorite recipes with you. I am obsessed with quinoa. I cannot wait to see if I can get all of you hooked on it too.
