Many times in the last twenty years, I was working full time, going to school full time and raising kids. So was my husband. That meant we didn't always have a lot of time or energy to prepare big meals, as such, casseroles and crock pots became a real staple for us. Now that life has slowed down, and there aren't as many of us to feed around the table anymore, these recipes sort of fell by the wayside in favor of smaller meals.
Then one day one of my kids said "Mom, why don't you ever make that anymore?" Talking about three or four of my best casseroles, and I thought I would dredge out the old recipes and see how to size them down a little for my new family size. While I was doing it, it rekindled my interest in casseroles, and now I'm interested in learning new ones!
