Turning the oven into a proof box with a container of hot water.

Lately, I've taken to nuking a two-cup pyrex measure of water to boiling and placing that next to the bowl of working dough inside a closed oven. With the windows open on a lovely, cool, dry day or in the winter when we are saving money by donning sweaters and using lap quilts in the house, the counter is no place for bread dough to rise to great heights.

Ugh! A picture may paint a thousand words but it also reveals my dirty oven for all to see! Guess what project is going on my list this week!!

OLD SHOOLHOUSE CAFETERIA ROLLS

I have been trying to locate a recipe for ole school cafeteria rolls. I have no idea if any of you are familar with the type of roll that i am searching for. It is cut out with a biscuit cutter, it also uses powdered milk. They also had at least 1/2 cup of sugar in the recipe. I have exhausted everything on line that has anything to do with schoolhouse cafeteria rolls . I have also exhausted just a pinch too.
I had these as a child in my elementary school. I mean to tell you they were fabulous.

In breaking down a bread recipe that calls for a lot of liquid in it. Does any of you know if you would cut the liquids in half also. The recipe that i am working on it calls for 8 CUPS H20, 6 2/3 CUP OF A.P. FLOUR
i would appreciate any feedback any of you might have. Thank you all so much

My favorite flour for making yeast breads.

The best flour I have found is Lehi Rolling Mills, Artisan baking flour for baking breads. I was introduced to it when I bought a bag of it, about 10 years ago, from the 99 cent store. Normally I would have use Red Hard Winter wheat.

A question

Howdy to everyone on this board. I have been trying recipes for French bread,kaiser rolls and Italian bread and have found many tasty recipes. I have a problem that seems to occur practically every time and that is that the dough seems to have trouble rising UP instead of OUT. My bread and Rolls grow horizontally instead of vertically. What is happening and how do I correct this. Any insight would be greatly appreciated.
