recipe for pokeno group

I like to make King Ranch casserole when it's my turn. You can find the basic recipe easily online. Which is what use, but I triple it or more. I also use a rotisserie chicken from "the Walmart", small can of green chilis, sometimes black beans or black olives. The PictSweet brand of frozen seasoning blend [onions, green and red peppers and celery] is cheap and no chopping! When it comes time to do the layering I use tortilla chips instead of the tortillas. I think it gets soggy if you use tortillas. especially if you make it ahead. This freezes very well! When it's time for pokeno, party or potluck.....Ta Da! You have a meal! When it is time to serve, I have toppings. Things like chopped cilantro, already walmart chopped green onions, guacamole, sour cream, pico de gallo or salsa, jalapenos, black olives.It helps make the dish go farther and adds a little texture. Whatever you think would sound good. Add a salad and you good to go! Have fun!
