I had leftover corned beef and kraut so I made "The Royal Reuben Omelet" for lunch today & had a slice of Irish bread with it.

All of my corned Beef Briskets and Cabbage are gone Kim. But I do have a few slices of Irish Soda Bread left that I have been enjoying toasted. We just love it. Your omelette looks delicious. My daughter was not able to come home, so I have a couple of extra briskets in the freezer to make when she does come home, and of course I will whip up some Irish Soda Bread.
