Do you know what ingredient has been popular? Coconut! When we post a recipe on our Facebook page with coconut, so many people love it. And I know why… it’s delicious. This treat is for so much more than a pina colada, and these irresistible coconut recipes are worth a try.<\/p>\n

When presented, Diane M.’s<\/a> (Twin Falls, ID<\/a>) Coconut Berry Macadamia French Toast<\/a> looks almost too good to eat!<\/p>\n

“I love nutty, loaded sweet stuff,” explains Diane. “This has all my favs all put together. Great for a brunch, party, or just for your sweetie.”<\/p>\n

Diane suggests using strawberries or raspberries. In the Test Kitchen, we used both, and it was a delicious\u00a0choice.<\/p>\n

The macadamia nut and coconut coating on the bread gives a surprise crunch. As it fries to a golden brown, the coconut caramelizes a bit. If you like things sweet, add a touch more sugar because the filling isn’t overly sweet. This a fancy but easy French toast recipe.<\/p>\n

“My husband and I went to Hawaii on our honeymoon and found Coconut Turnovers<\/a> at a local fish market in Koloa,” shares Lisa Cancilla<\/a> (Parlin, NJ<\/a>). “I tried to find a recipe online, but I couldn’t, so this is what I came up with. My whole family loved them, and I hope you do too!”<\/p>\n

I thought these coconut turnovers were divine. When you eat one, you bite into flaky layers of buttery pastry filled with a moist, sweet, and caramelized coconut center.<\/p>\n

The turnovers have a tropical flair and would be delicious for breakfast, dessert, or a sweet treat. No one needs to know how simple they are to make.<\/p>\n

Nicole Hood<\/a> (Leesville, LA<\/a>) was also inspired by a trip to Hawaii and posted her Tropical Waldorf Salad<\/a> recipe.<\/p>\n

“This is perfect for a summer picnic or serve it at a party in decorative spoons,” thinks Nicole.<\/p>\n

This fruit salad whips together cream cheese and pineapple juice to create a sweet and tangy dressing.<\/p>\n

I loved biting into the apple and macadamia nuts. Then in the next bite, there’s pineapple coated with cream cheese dressing and shredded coconut. It’s a fantastic combination of flavors.<\/p>\n

“So, this is a twist I took from a deep-fried coconut breaded recipe,” reveals Ashley Muller<\/a> (Chandler, AZ<\/a>). “I wanted a healthier style of chicken, and this is what I came up with.”<\/p>\n

Ashley’s Grilled Coconut Chicken<\/a> is a fantastic way to up the flavor of chicken breasts.<\/p>\n

Marinating in coconut milk makes the chicken moist and flavorful. Once grilled, the chicken is so tender you can cut it with a fork. Toasted coconut is sprinkled on top adding a little crunch to every bite. This chicken is sweet, salty, and savory.<\/p>\n

If you like the famous candy bar, you need to make Beth Harris’<\/a> (Danville, OH<\/a>) Mama’s Mounds Bar Pie<\/a>. There are layers of happiness with each bite of this easy and delicious pie.<\/p>\n

“This pie is so addictive,” says Beth. “A huge hit with my boys!”<\/p>\n

The coconut in the creamy filling is sweet, and mini chocolate chips add a crunchy texture. As Beth mentions, the hardest part is waiting for the pie to cool for 24 hours in the fridge.<\/p>\n
