This weekend I found the tastiest blueberries. I may have gone a little overboard and bought way more than I can snack on. So, I decided to do a little recipe research and figure out how I could use the extra blueberries.<\/p>\n

“This is a great summer take-along dessert,” says Laurie Lenartowicz<\/a> (Livingston, TN<\/a>) about her Beautiful Blueberry Lemon Bundt Cake<\/a>. “It’s bursting with fresh New Jersey blueberries and lemon zest. You can choose to finish this beauty with a glaze or dust with powdered sugar.”<\/p>\n

We opted for the glaze and added extra lemon zest and blueberries on top of the moist Bundt cake. Yum! Lemon and blueberry are a wonderful combination and this pound cake is full of those flavors. It’s fairly simple to throw together and will impress everyone.<\/p>\n

If you want a treat kids can help make, try Mary Compton’s<\/a> (Dallas, TX<\/a>) 3 Kiddos Favorite “Dessert” Quesadillas<\/a>.<\/p>\n

“With this simple treat, the possibilities are endless to suit anyone’s appetite\/taste,” shares Mary. “This is what we cooked with the blueberries we had!”<\/p>\n

Mary came up with this dessert while baking in the kitchen with her grandkids. It’s a simple and easy snack. They remind us of pancakes.<\/p>\n

When fried, the fresh blueberries soften and taste like a hot blueberry jam inside the bread. Sprinkling cinnamon sugar on top is a delicious final touch.<\/p>\n

Blueberry pie is one of my favorites and John Myers<\/a> (Madison, OH<\/a>) shared a recipe with a twist. His Blueberry Goat Cheese Pie<\/a> is unusual and delicious.<\/p>\n

“My grandmother in West Virginia used to make this pie every year in the summertime for family reunions,” reveals John. “It was always one of my favorites!”<\/p>\n

One bite and you’ll fall in love with this unique pie. A sweet, crunchy almond topping is sprinkled on top. The filling is packed with tart blueberries. Mixing in goat cheese and heavy cream makes the filling creamy. There’s also a hint of basil hidden inside.<\/p>\n

Let’s not forget about the homemade crust – it’s a complete winner. It’s flaky, easy to prepare, and makes this pie even better.<\/p>\n

I can’t talk about blueberries and not think of blueberry muffins.<\/p>\n

In the morning, with a cup of coffee, they’re a nice way to start the day. If you bake a batch of Marina Gordon’s<\/a> (Oil City, PA<\/a>) Blueberry Buttermilk Muffins<\/a> on a Saturday morning, they’ll be gone by Sunday dinner.<\/p>\n

They’re light and fluffy, yet dense like a muffin. With just the right amount of blueberries in each muffin, you get a nice burst of flavor in every bite.<\/p>\n

“This Blueberry Cream Cheese Crumb Cake<\/a> is delicious,” thinks Patti Rahilly-Jones<\/a> (Wrightstown, NJ<\/a>). “The recipe is a bit detailed, but oh so worth it!”<\/p>\n

This blueberry crumb cake is delightful. The cake is dense and slightly sweet. You get a great surprise when you bite in and taste the cream cheese and blueberries in the middle.<\/p>\n

The crumb topping adds a little crunch. This will be great for breakfast, brunch, or even dessert if you don’t like overly sweet desserts. I really enjoyed this.<\/p>\n
