Lisa Johnson’s<\/a> (Fort Worth, TX<\/a>) Strawberry Icebox Pie<\/a> is incredibly easy to make and perfect for summer.<\/p>\n

“You may substitute any frozen fruit of your choosing,” shares Lisa. I opted to use strawberries (as the recipe is written) and there are bits of strawberry in every bite.<\/p>\n

The filling is creamy and fluffy with a tart and sweet flavor. It sits in a graham cracker crust that complements the flavor of the filling. When ready to serve, everyone’s eyes will light up with their first bite.<\/p>\n

Can there be snowballs in the summer? Absolutely, if you make Alice May Matulevich’s<\/a> (The Villages, FL<\/a>) Snowballs<\/a>.<\/p>\n

“They’re not what you think they are (hint: not a cupcake!),” reveals Alice May. “These snowballs are a delicious refrigerated dessert made with vanilla wafers, pineapple filling, Dream Whip, and coconut.”<\/p>\n

Different than anything I’ve ever made, these snowballs are a nice, light, festive, and fluffy treat. The Nilla Wafers become softened while in the fridge but they’re not soggy. Sweet and tart pineapple filling pairs well with the flaky sweet coconut. Yum!<\/p>\n

Want to watch a dessert vanish the minute you serve it? This is what will happen when you make Lisa Mersereau’s<\/a> (Marysville, WA<\/a>) Snickers No-Bake Cheesecake<\/a>.<\/p>\n

“We love cheesecake and the twins love Snickers,” explains Lisa. “What could satisfy everybody? I decided to try making a Snickers Cheesecake. What could be better than that? A no-bake cheesecake, that’s what.”<\/p>\n

This does indeed have all the flavors of a Snickers. In fact, it may be better than the candy bar. It starts with an easy chocolate graham cracker crust that’s underneath a very creamy cheesecake layer. I love the next layer that’s gooey and nutty.<\/p>\n

On top, is a super chocolaty frosting. When serving, definitely drizzle with a bit of caramel and chocolate. So good!<\/p>\n

If you love chocolate, Bill Wesley<\/a> (The Villages, FL<\/a>) shared his recipe for Sinful Chocolate Mousse<\/a> that truly is sinful.<\/p>\n

“Even in restaurants, chocolate mousse seems to be nothing more than chocolate pudding,” thinks Bill. “This recipe is the real thing. It is not difficult to make but your taste buds will be delighted with a melange of flavors – chocolate, coffee, and citrus.”<\/p>\n

Creamy and chocolaty, this is definitely a rich and indulgent dessert. I love using Grand Marnier and Kahlua. Kahlua adds a slight coffee flavor while Grand Marnier gives a faint taste of orange. Its texture is perfect – light and fluffy.<\/p>\n

Now, technically Virginia McGee’s<\/a> (Sierra Vista, AZ<\/a>) Iced Mocha Coffee<\/a> is a drink. But, it’s so decadent it can really satisfy a sweet craving.<\/p>\n

“My husband is a coffeeholic,” jokes Virginia. “He started buying them all the time and it just wasn’t in the budget. So in defense of our budget, I made up a recipe that tastes even better and more like coffee too.”<\/p>\n

This is honestly as good as the iced coffees at any fancy coffee shop but at a fraction of the cost! Keep this easy iced coffee on hand when you want to cool down. It makes a ton… great if you have a family of coffee drinkers.<\/p>\n
