Keeping with last week’s theme of easy Easter menu ideas<\/a>, I plan to keep things simple with my dessert menu too. In my house even if there are only two of us for dinner, we like dessert options.<\/p>\n

Carrot cake is a tradition on Easter. Reta Smith<\/a> (Liberty, MO<\/a>) shared her Tennessee Carrot Cake<\/a> that’s delicious.<\/p>\n

“This is a moist and very flavorful cake that everyone will enjoy,” shares Reta. “It is easy to assemble and will keep for several days (in very warm weather keep it in the fridge).”<\/p>\n

There is nothing subtle about this carrot cake. It is bursting with a wonderful blend of spices and whiskey-soaked raisins. Add that with the rustic sweetness of the shredded carrots and you have a lot of flavor in this cake.<\/p>\n

The tipsy cream cheese frosting spread on top makes this cake a knockout. Full of sweet, bold flavors you’re not going to be able to resist a slice of this easy-to-make dessert.<\/p>\n

Patricia Yates<\/a> (The Villages, FL<\/a>) thinks her Lemony Lemon Cake<\/a> “is the perfect dessert for your Easter meal” and I’d agree.<\/p>\n

I love anything lemony so I was excited to try it. This cake is light, moist, and refreshing. It begins with a boxed lemon cake mix so this is an easy dessert.<\/p>\n

Seriously, the hardest part is poking holes in the cake so the buttery lemon glaze can seep inside. Mixing Cool Whip with store-bought lemon frosting makes for a silky smooth icing. Each bite is bursting with lemon goodness.<\/p>\n

“Coconut pie and cake are my favorite desserts and I am always looking for the best recipes,” reveals Gail Welch<\/a> (Carthage, TX<\/a>). “I actually think the pie could be a little sweeter by adding a couple more tablespoons of sugar but my husband thought it was just right.”<\/p>\n

Gail’s Double Coconut Cream Pie<\/a> has the perfect creamy filling and the meringue is light and fluffy. Toasted coconut flakes on top add a pop of coconut flavor, but also make the pie look pretty. Each bite is smooth and creamy and tastes like spring.<\/p>\n

Chess pie is a Southern favorite for a holiday meal and Rose Daly<\/a> (Madison, TN<\/a>) shared her Deep Dish Buttermilk Pie<\/a> that I enjoy.<\/p>\n

“Just an old-fashioned chess pie,” says Rose. “Best of all, you can’t taste the buttermilk and it’s so rich.”<\/p>\n

This deep dish pie is so yummy. There’s a sweet caramelized flavor with a light tanginess from the buttermilk. It browns perfectly when baking and looks pretty when presented. It deserves a spot on your dessert table but is so good you’ll make it just because it’s Wednesday.<\/p>\n

Angie Sarris’<\/a> Ole Fashioned Iced Easter Bunny Cookies<\/a> are adorable. Your family will think you picked them up at the bakery.<\/p>\n

“They are great for all sorts of holidays, birthday, bridal showers, anything really,” explains Angie. “I started making them like this years ago with the little bows and everyone goes crazy over them.”<\/p>\n

The simple, buttery sugar cookie is scrumptious. The dough is easy to work with and I took Angie’s advice to cut them a little thicker. They were nice and chewy. The cookie’s not overly sweet, so the glaze not only makes them pretty it adds just the right amount of sweetness.<\/p>\n
