In my part of the country, one day it’s cold the next it’s warm. I’m not sure Mother Nature can figure out what season it is. Even if the weather is a tad warmer, around now in my house it’s always soup season.<\/p>\n

The smell of a pot of soup simmering on the stove makes me happy. There’s really nothing better than homemade soup. And it’s so simple to make!<\/p>\n

“Packed full of flavor, this Tuscan Sausage and Vegetable Soup<\/a><\/strong> is simple, easy and full of vitamins with all the veggies in it,” says Rose Rauhauser<\/a><\/strong> (Bronx, NY<\/a><\/strong>) of her grandmother’s healthy recipe. <\/p>\n

This yummy soup has rich flavor of sweet Italian sausage mixed with the fresh herbs and vegetables. They balance together perfectly after simmering for an hour or so. I like the tip of blending a can of cannellini beans for thickness. This is hearty enough it could be served as a main dish. And, the cheese on top is a must! It adds an extra pop of flavor.<\/p>\n

Kelly Roberts’<\/a><\/strong> (Oscoda, MI<\/a><\/strong>) Bean Bacon Blue Cheese Tomato Soup<\/a><\/strong> is made for blue cheese fans. “The blue cheese gives this soup a little zing,” explains Kelly. “I added the bacon, crumbles, and garlic croutons to really top this soup off.”<\/p>\n

I love the bold flavors. The blue cheese and cream cheese definitely add a bit of tang to the soup. Salsa is an unusual ingredient, but provides so much flavor and, combined with northern beans, add texture. Creamy and satisfying, this is perfect for a cold night.<\/p>\n

Having a Mexican night in your home tonight? Instead of Taco Tuesday, why not turn your favorite flavors into a soup and whip up a batch of Wanda Grundmann’s<\/a><\/strong> (Kenner, LA<\/a><\/strong>) Mexican Corn Soup<\/a><\/strong>. It’s good and creamy with just the right amount of heat.<\/p>\n

Wanda jokes to “be prepared to hear a lot of mmmm’s at the dinner table.” Joy Fulkerson<\/a><\/strong> (Indianapolis, IN<\/a><\/strong>) made it for her family and it was a big hit. She loved it, but sounds like her husband was a very big fan… he had three bowls!<\/p>\n

I doubt Wanda had any leftovers after that meal, but if you’re looking for a way to use leftover chicken, pork or steak try Karla Everett’s<\/a><\/strong> (Greenacres, WA<\/a><\/strong>) Asian Noodle Soup<\/a><\/strong>. “It’s quick and easy to make when you have leftover meat,” says Karla.<\/p>\n

William Hartwell<\/a><\/strong> made the recipe using bbq Thai pork and added a bit of Sriracha, fish sauce, and bok choy and “everyone enjoyed themselves and all went back for seconds.” That’s one of the things I love about this recipe. It has wonderful flavor and you can increase the seasoning or cut back on the heat depending on your preference.<\/p>\n
