This Sunday, kick mom out of the kitchen and spoil her with a special Mother’s Day breakfast. From super simple to a few steps, these Blue Ribbon recipes are not only perfect for brunch, but they’re also delicious too.
Sharon’s salad would be great served alongside a yogurt parfait. A great lighter breakfast option. It’s filled with orange slices, pecans, blueberries, strawberries, and other goodies.
What I like is that you can customize what fruit is included based on preference. I wouldn’t substitute the orange honey dressing, though. It’s sweet, tangy and delicious.
If mom is doing a low carb diet, try Janice Joy Miller’s (Escondido, CA) Low Carb Zucchini Quiche. Janice Joy didn’t have any milk in the house and substituted a coffee creamer she had on hand. It’s definitely an odd ingredient but adds just the right amount of sweetness. To make this Keto friendly, substitute heavy cream or half and half for the creamer.
Her crust is made with turkey bacon which adds so much smoky flavor to the quiche. It’s filled with zucchini and has a cheesy topping. So good.

She makes a crab salad mixture filled with green pepper, onion, artichoke hearts, cheddar cheese, and gruyere. The salad is put on top of the biscuits and toasted in the oven.
Then, it’s topped with a poached egg and a simple mock hollandaise sauce. It’s fancy and there are a few steps to the recipe, but a lot can be done ahead of time. Mom will be impressed when she sees these on her plate.

These pancakes are tender and have just the right amount of chocolate chips. The chips melt and are chocolate gooey perfection. Alone, the pancakes are thick, fluffy and delicious. We topped them with whipped cream, extra chocolate chips, and maple syrup. My, oh my, they’re delicious.
