Ingredients For vegetable me'lange

1medium red onion, chopped

1 Tbspsoy sauce

1/2 ctomato paste

1 cpeas
-
3 tspmarjoram

5 cwater

2 Tbspparsley, minced

5garlic cloves, minced

1/4 cbarley
-
1/2 ccorn
-
1stalk celery, sliced
-
4medium carrots, sliced

1 cspinach, chopped/packed
How To Make vegetable me'lange

1Place the onions, carrots, celery, corn, barley, garlic, parsley and 3 cups of the water in a large sauce pan.

2Place the remaining 2 cups of water, the tomatoes and marjoram in a blender and process on low to medium speed until smooth.

3Add to the sauce pan.

4Bring to a boil, then turn down heat, cover and simmer for 1 1/4 hours.

5Add the peas, spinach, tomato paste and soy sauce, cover and simmer for 10 minutes more.

6Note: If you are using very mature garden peas, add them 10-15 minutes sooner.
