shrimp gazpacho

I had shrimp on gazpacho years ago while visiting New Mexico,it was so delicious,I started adding it to gazpacho when I made it.

Ingredients For shrimp gazpacho

  • 1 english cucumber, halved and seeded, peeled
  • 2 red bell peppers,cored and seeded
  • 4 plum tomatoes
  • 1 red onion
  • 4 garlic cloves,minced
  • 1/4 c radishes,sliced thin
  • 3 c spicy v-8 juice
  • 1/4 c white wine vinegar
  • 1/4 c olive oil
  • 1 t. black pepper
  • 1/2 lb cooked shrimp,chilled

How To Make shrimp gazpacho

  • 1
    Mince the cucumbers, bell peppers, tomatoes and red onion. In a large bowl,add vegetables,garlic,radish, V-8,vinegar, olive oil, and pepper. Mix well and chill before serving. Taste for seasoning,may need salt but sometimes V-8 is salty enough. Just before serving,top with shrimp.
