I had shrimp on gazpacho years ago while visiting New Mexico,it was so delicious,I started adding it to gazpacho when I made it.

Ingredients For shrimp gazpacho

1 english cucumber, halved and seeded, peeled
-
2 red bell peppers,cored and seeded
-
4 plum tomatoes
-
1 red onion
-
4 garlic cloves,minced
-
1/4 c radishes,sliced thin
-
3 c spicy v-8 juice
-
1/4 c white wine vinegar
-
1/4 c olive oil
-
1 t. black pepper
-
1/2 lb cooked shrimp,chilled
How To Make shrimp gazpacho

1Mince the cucumbers, bell peppers, tomatoes and red onion. In a large bowl,add vegetables,garlic,radish, V-8,vinegar, olive oil, and pepper. Mix well and chill before serving. Taste for seasoning,may need salt but sometimes V-8 is salty enough. Just before serving,top with shrimp.
