Ingredients For savory potato soup

    russet potatoes, peeled and cubed
  • 5 c
    chicken broth (i use swanson's)
  • 2 c
    heavy cream
  • 4
    thick slices of bacon
  • 1 Tbsp
    butter
  • 1 md
    onion, diced
  • 1 tsp
    dried rosemary
  • 1 tsp
    italian seasoning
  • 1/2 tsp
    celery seed
  • 1/2 tsp
    garlic salt
  • salt and pepper, to taste

How To Make savory potato soup

    In large, heavy saucepan, cook bacon strips until crispy. Remove from pan and crumble. Add butter to bacon drippings saute onions, Rosemary, and Italian Seasoning. Cook until onions are translucent but not browned.

    Pour in chicken broth carefully, and bring to a boil. Add potatoes and cook for 30 minutes.

    Pour in heavy cream and add crumbled bacon, celery seed, and garlic salt. Reduce heat and simmer for another 30 minutes. Season with salt and pepper to taste. I like to serve with my Garlic Cheddar Biscuits!
