PLAIN OLE VEGETABLE SOUP (SALLYE)

This is just a plain vegetable that is filling and tasty, but doesn't contain a lot of calories per serving.

4 medium
russet potatoes
3
carrots (or 8 oz prepackaged matchsticks)

celery ribs
1 medium
white onion
1 can(s)
hunts fire roasted diced tomatoes (28 oz)
1 can(s)
hunts tomato sauce (8 oz)
1 pkg
mixed vegetables (10-14 oz)

low sodium chieken bouillon cubes

bay leaves
1 Tbsp
chili mix (link to recipe below)
1 Tbsp
sea salt
1 Tbsp
ground pepper
4 qt
water
1/4
head of shredded cabbage (optional)

Directions Step-By-Step

Peel and dice potatoes into bite sized pieces

Place celery and onion in food processor and pulse until finely diced

Peel and slice carrots (or use prepackaged ones)

Shred cabbage if you plan to use

Place water, bouillon cubes and spices in heavy saucepan, bring to a boil

Add tomatoes and tomato sauce, bring liquid back to a boil

Add potatoes, carrots, celery and onions to boiling water mixture

Turn heat down to medium and simmer for approximately 20 minutes

Place package of mixed vegetables in microwave and cook covered for about 3 minutes

Add to soup mixture.

If you plan to include cabbage, add it at this time

Taste test and adjust seasonings accordingly.

Cook for ten more minutes until all vegetables are tender

Good served with hot cornbread or grilled cheese sandwiches
