Ingredients For pasta fagioli

3 ozpepperoni slices

1 Tbspolive oil

1 can28oz crushed tomato

1 can15 oz cannellini beans

2 Tbspitalian seasoning

2 ozred or white wine
-
2 cditalini pasta

1 pinchgrated cheese
How To Make pasta fagioli

1On stovetop, In 6 qt. pot, add 1 tbsp oil and heat for 10 seconds. Add pepperoni and saute for a minute.

2Drain off excess oil. To pot,add canned tomatoes, beans and red ( or white wine) and Italian seasoning. Stir.

3Simmer on low heat for 2 1/2 hours, stirring occasionally, adding water or more wine if consistency is too thick.

4Boil Pasta until al dente.

5To serve, use individual bowls, add a scoop of pasta, and cover with the sauce mixture. Add grated cheese, if desired.
