This soup was first given to us by a very caring neighbor when our oldest child was born...over 20 years ago! We have made it and shared it with others so many times over the years! In honor of our very caring neighbor (who has served as a pediatric oncology nurse for many, many years) we have named it after her! May it warm your hearts as it has ours!

Ingredients For miss ann's vegetable soup

  • 1 can
    large V8 Juice (flavor or your choice)
  • 1 pkg
    Lipton onion dry soup mix
  • 1 pkg
    frozen vegetables for soup
  • 1 pkg
    frozen okra (optional)
  • 1 lb
    ground chuck
  • 1 can
    8 oz - tomato sauce
  • Mrs. Dash seasoning (or brand of your choice)
  • 1 pkg
    extra-fine noodles (I use Manischewitz yolk free)

How To Make miss ann's vegetable soup

    Brown meat; drain. Put in a large pot and add the rest of the ingredients except for the noodles. For the seasoning, just use a few shakes. The additional bag of okra is optional. We love it...so we add it!

    Bring to a boil; then simmer for a couple of hours. Or after boiling for a few minutes, I like to transfer it to a crock pot and then either cook it on low for a number of hours, or on high for a couple of hours.

    Approximately 10 minutes before serving, slightly crush up a couple handfuls of the noodles and toss them in. The more you add...the thicker the soup will get. If it gets too thick...just add some water.

    To serve, I offer hot sauce for those who like it spicier, grated cheese of your choice and sour cream. It is wonderful served with corn bread or muffins...or a crusty whole grain!
