I REC'D THIS RECIPE FROM A CO-WORKER BEFORE I RETIRED. IF YOU LIKE KALE, YOU WILL ENJOY THIS SOUP.

Ingredients

1 small
bunch of kale
2 tsp
olive oil
1 large
onion, sliced into rings
4
garlic cloves--finely chopped
1/4 tsp
red pepper flakes
1 can(s)
cannellini beans--rinsed & drained
3 c
chicken broth--fat free
2 c
water
1/4 tsp
oregano--dried
salt & pepper to taste
2 Tbsp
parmesan cheese

Directions Step-By-Step

WASH KALE WELL, REMOVE LEAVES FROM STEMS & DISCARD STEMS. TEAR LEAVES INTO PIECES. SET ASIDE

HEAT OLIVE OIL IN HEAVY PAN OVER MEDIUM HEAT & SAUTE ONION RINGS STIRRING OCCASIONALLY UNTIL IT BEGINS TO CARMELIZE (15 MINS OR SO)

ADD GARLIC & PEPPER FLAKES & SAUTE MIXTURE ANOTHER MINUTE.

ADD BEANS, BROTH, WATER & OREGANO, BRING TO SIMMER

ADD KALE & SIMMER UNCOVERED, STIRRING OFTEN UNTIL DONE. SEASON WITH SALT & PEPPER.

I LET THE SOUP SIMMER FOR ALMOST AN HOUR ON LOW HEAT BEFORE SERVING.

SPRINKLE PARMESAN ON TOP OF SOUP BEFORE SERVING IF SO DESIRED.
