WASH KALE WELL, REMOVE LEAVES FROM STEMS & DISCARD STEMS. TEAR LEAVES INTO PIECES. SET ASIDEHEAT OLIVE OIL IN HEAVY PAN OVER MEDIUM HEAT & SAUTE ONION RINGS STIRRING OCCASIONALLY UNTIL IT BEGINS TO CARMELIZE (15 MINS OR SO)ADD GARLIC & PEPPER FLAKES & SAUTE MIXTURE ANOTHER MINUTE.ADD BEANS, BROTH, WATER & OREGANO, BRING TO SIMMERADD KALE & SIMMER UNCOVERED, STIRRING OFTEN UNTIL DONE. SEASON WITH SALT & PEPPER.
I LET THE SOUP SIMMER FOR ALMOST AN HOUR ON LOW HEAT BEFORE SERVING.SPRINKLE PARMESAN ON TOP OF SOUP BEFORE SERVING IF SO DESIRED.
