Been under the weather for days and today finally felt like cooking just a little something. Three simple ingredients and 10 minutes later we had a yummy soup. This recipe doubles well. I used stir fry veggies and added some frozen white corn. Use your families favorite veggies and make everyone happy. This will also be good when you need to get something on the table in 10 minutes w/ minimal labor involved. Add some warm rolls and you have a meal.

Ingredients For "i've felt better" cheesy vegetable chowder

  • 32 oz
    beef broth
  • 16 oz
    your favorite frozen vegetable mix
  • 1 lb
    (16 oz.) velvetta type cheese

How To Make "i've felt better" cheesy vegetable chowder

    Empty frozen vegetables into Dutch oven. Cover with beef broth. Bring to a boil. Cook 8-10 minutes or until vegetables are cooked.

    While veggies are cooking in beef broth, cut cheese into small blocks. Stir into cooked veggies immediately and stir until cheese melts. Serve hot and enjoy.
