Ingredients

water
2 large
onions, peeled and quartered

garlic cloves, peeled

celery stalks, sliced
2 large
potatoes, scrubbed and coarsely chopped

leeks, white part only
parsley sprigs
2
bay leaves
10
peppercorns
4 Tbsp
soy sauce
4 large
carrots, thickly sliced

Step-By-Step

1Place all of the ingredients in a large soup pot; bring to a boil, reduce the heat, cover, and simmer over low heat for 3 to 4 hours.

2Strain the broth and discard the vegetables.

3Freeze in 1- to 2-cup containers for use in recipes calling for vegetable stock or broth.
