The vegetables were all fresh from my garden; if you do not have these varieties, please replace with your favorite variety.

But please, please, please do not skip the carrot tops.

You will be pleasantly surprised!

Reminiscent of French Onion Soup. Feel free to load up on fresh herbs. Lovely lavender or purple basil would be divine.

Ingredients

cosmic purple carrots, diced

atomic red carrots, diced

carrot tops, chopped

black krim tomatoes, quartered

german johnston tomato, diced
2 clove
garlic, sliced

mini red bell peppers, diced

lamb shank bone
1 Tbsp
smoked paprika
1 tsp
cayenne
1/2 stick
butter or olive oil
1 Tbsp
worcestershire sauce
water to cover
1 c
champagne, optional
shaved cheddar to serve

Directions Step-By-Step

Place all ingredients in a crock pot on low. Slow cook for 24 hours, stirring occasionally.

Remove bone.

Serve with a heaping serving of shaved cheddar and a sprinkle of ground oregano to taste. I recommended a freshed baked crusty French loaf and unsalted sweet cream butter.
