Ingredients

2 1/2 lb
potatoes
1 large
leek
1 can(s)
great northern beans
32 oz
vegetable broth, unsalted
1/2 tsp
rosemary, dried
1/2 tsp
sage, dried
1/2 tsp
thyme, dried
1/2 tsp
garlic powder
To taste
salt and pepper
sour cream, fat-free
or
greek yogurt
Optional
cheese, low fat

Step-By-Step

1Peel and slice potatoes.
2Slice the leek long ways and then separate and clean the layers.
Cut off the dark green part of the leek and slice.
Soften the leeks in a pan with a little butter or non stick cooking spray.
3Add everything to crock pot and cook on low for 7 hours.
4Serve with non fat greek yogurt or sour cream. You can also add a little low fat cheese if you like.
