Creamy Pumpkin Soup
The perfect fall soup!
1In a large saucepan, saute onions in butter until tender. Add broth, potatoes and pumpkin and cook until potatoes are tender, about 15 minutes.
2remove from heat and allow to cool. puree half of the mixture at a time until smooth, and return all to pan.
3Add milk, nutmeg, salt and pepper, and heat through. Spoon soup into bowls and top each with a dollop of sour cream.
