Creamy Carrot and Sweet Potato Soup

I came up with this tonight because we have been eating too much Xmas goodies at work and wanted something light.

Ingredients

1 lb
baby carrots
1 medium
sweet potato
1 medium
apple
4 c
chicken broth
1/2 tsp
cumin
1/2 tsp
cinnamon
1/4 tsp
curry powder
1/2 tsp
salt
1/4 tsp
white pepper
1/2 tsp
chopped garlic
1/4 tsp
creole seasoning
1/4 c
evaporated milk
1 Tbsp
agave nectar

Step-By-Step

1Peel apple and sweet potato, chop with carrots in a food processor. Mix in medium size saucepan with the chicken broth. Add the rest of ingredients except evaporated milk and agave nectar. Bring to a boil and simmer until vegetables are tender.
2Blend in pan with immersion blender or puree in batches in blender. Add agave nectar and evaporated milk and heat until almost simmering. Can thicken with 1-2 TBS instant mashed potato flakes if necessary.
3Adjust seasonings to taste. The seasoning measurements are approximate, I just shake and taste as I go. Enjoy.
