Cream Of Vegetable Soup

This creamy soup is a wonderful way to get your veggies in. I made a quick batch to take to my moms for lunch...as she loves it. It's also a quick soup to throw together, which is always a plus.

You can use whatever vegetables you like, I just like the sweetness of the carrots with the broccoli and cauliflower.

Ingredients

onion, chopped
3/4 c
butter
1/2 c
flour
4 c
4 cups chicken or vegetable broth
3 c
milk
1 c
whipping cream
1 Tbsp
dried basil
1 Tbsp
salt
1 tsp
pepper
1/2 tsp
garlic powder
5 c
vegetables (broccoli, carrots and cauliflower), cooked

Directions Step-By-Step

In large kettle, saute onion in butter until tender.
Add flour; cook and stir until bubbly.

Enjoy with a nice crusty piece of bread.

Gradually add chicken broth; cook and stir until thickened, about 5 minutes.

Whisk in the milk, cream, basil, salt, pepper, and garlic powder. Add cooked vegetables. Cook gently until heated through. Do not boil.
