grated cheddar cheese is nice in this soup . to change this soup to Broccoli and cheddar,add 2 bags of broccoli or 5 heads of broccoli instead of cauliflower and follow the same dictations.

Ingredients

head of cauliflower, small florets
1 large
onion, chopped
20 l
water
2 c
chicken soup base
1 qt
18% cream

Step-By-Step

1saute onions with a little margarine add cauliflower,add water and soup base, bring to a boil and simmer until cauliflower is tender
2set off stove and puree , cool and finish the soup next day . put on stove bring to a boil and turn down to simmer and thicken with the standard amount of roux, let simmer for a least 20 min. or longer add cream and add cheese stir until melted serve
