Marsha's StoryI usually end up quadrupling this recipe if I make for my soup loving grand kids. I use fresh broccoli and just microwave it for a few minutes before adding to soup.
I sometimes add shredded cheddar to make a Cheesy Cream of Broccoli Soup. Adapt to your family.
broccoli, cut into florets and blanched in microwave
all purpose flour
freshly ground black pepper
freshly grated nutmeg
1Cook onions in butter. Stir in flour, salt, pepper, nutmeg, milk and chicken broth. Cook until slightly thickened. Add broccoli and heat through.
2I take my submersion blender at this point and blend until smooth. Reserve a little broccoli to serve as a garnish on top.
3If adding cheese, do so after blending. Heat through being careful not to scorch.
