Cream of Broccoli Soup
|1 bunch||broccoli, cut into florets and blanched in microwave|
|3 Tbsp||onion, chopped|
|5 Tbsp||all purpose flour|
|1/4 tsp||kosher salt|
|dash(es)||freshly ground black pepper|
|dash(es)||freshly grated nutmeg|
|1 c||chicken broth|

DirectionsCook onions in butter. Stir in flour, salt, pepper, nutmeg, milk and chicken broth. Cook until slightly thickened. Add broccoli and heat through.I take my submersion blender at this point and blend until smooth. Reserve a little broccoli to serve as a garnish on top.If adding cheese, do so after blending. Heat through being careful not to scorch.
